Watermelon Sharbat
Summers have arrived and water isnt enough to quench the thirst. Why not make some watermelon sharbat to beat the heat…. so i have 2 versions of this as well .. 1 is the basic one we get at street stalls and one is a thick richer version of the same . Lets learn to make both.
Street style…. take 500 ml of milk and heat it and put 3/4th cup of sugar and let it melt. Switch off heat and add 1 tsp icecream essence and mix . Let the milk come to room temperature and mix puree of half cup watermelon and mix ( you can simply just grind milk sugar and watermelon with a hand blender but i prefer cooking as raw sugar has many side effects comparing to cooked sugar) now mix 1-2 cups of chopped deseeded watermelon and lots of ice . Serve chilled
Richer version…. heat 500 ml of milk and put 1 cup of sugar and 1 tbsp custard powder dissolved in 1 cup of water. Cook well till thick. Switch off heat and mix in 1 tsp icecream essence , and let cool and mix in 1 cup watermelon puree and 1-2 cups of chopped deseeded watermelon , lots of ice and serve chilled .
Ps.1. you can also add a pinch of orange colour to the milk …it looks n tastes the same as the famous watermelon sharbat of borhi mohalla . Well known as imam sharbat .They i guess are the only ones that sell the orange version.
Ps.2…. the street vendors do not put pureed watermelon they just put chopped watermelon . If u wish u can do the same . I add the puree as it really gives a nice watermelon flavor in every sip.
