Turkish Adna Bread
A baked delicacy you are going to love in sha Allah
For adna
In a bowl mix together 250 gms boneless chicken cubes ( you can also make with mutton or beef mince), half small chopped onion , half small capcicum chopped ( preferably red bell pepper if u dont have use green) , 3/4th tbsp chopped garlic , half tsp red chilli powder , half tsp red chilli flakes , 1/4th tsp dhanya powder ,1/4th tsp zeera powder , half tsp sumac ( this is a arabic spice easily available in imported stuff stores , if u dont have u can use anar dana powder ) , 2-3 green chillies chopped , and lots of chopped coriander and salt .mix well and grind to a fine mince , let marinate for half hour or preferably overnight .
Heat grill pan with little oil and shape into a flat seekh with help of a flat skewer ( i used the back of my tavitha , u can basically use anything thats flat and aprox half inch or an inch wide ) grill till done.
For the dough:- mix together 2 cups of maida , 1tbsp sugar,1 tbsp yeast , salt to taste , knead this with lukewarm water to a soft dough and apply some olive oil on top . Cover and keep aside to ferment for 2 hrs (don’t use very hot water or it will kill the yeast and dough will not ferment)
For the veggie mix
Mix together 1 finely chopped onion, 1 finely chopped tomato, 1 smalll chopped capsicum, half cup boiled corn , 1 cup grated cheese ,half cup mayonnaise , 1 tsp red chilli flakes, 1 tsp oregano and salt to taste
Roll out an oblong shape with a ball of dough , spread veggie mic in the centre and put a adna on top , close from sides and brush with egg . Sprinkle lots of Kalonji and white til on top and bake at 220 degrees for 15 min or till golden.
Serve hot.
