Smoked Shezwan Noodles And Chilli

This is a delicious twist to the regular Shezwan noodles . A must try for all u indo Chinese lovers .

First make red paste (grind together , 4 Kashmiri red chillies with , half cup ketchup , 1 tbsp vinager , 2 tbsp Shezwan sauce 2 tbsp soya sauce , 3 tbsp chilli sauce , 1 tbsp sugar , 1 tsp white pepper powder ,salt ,And a pinch of red colour to a fine paste.)

Now in a wok or vessel put oil , put 1 tbsp chopped garlic , 1 tsp chopped ginger, 1 tbsp chopped onion, 1 chopped green chilli and sauté for a few seconds, ( if you’re making chicken add 100 gm chopped chicken at this stage and sauté till done ) add very little julienned veg ( carrot , capsicum and cabbage ) and sauté little and add half of the prepared red sauce . Add 2 packets ( total aprox 400 gm ) boiled Hakka noodles and sauté till the noodles r well coated with the sauce . Lastly add little chopped spring onion and sauté . Do coal dhungar . Once done mix the oil from the coal into the noodles . And cook for a minute. Your smoked Shezwan noodles r ready.

For chilli in a wok or Kadhai put oil , put 1 tbsp chopped garlic , 1 tsp chopped ginger, 1 tbsp chopped onion, 1 chopped green chilli and sauté for a few seconds, ( if you’re making chicken add 250 gm chicken cubes (preferably leg) at this stage and sauté till done ) add the remaining half of red paste and sauté . Add cornflour slurry of 2 tbsp corn flour mixed with half cup water and some diced onion and capsicum . Cook till thick . Add 250 gm fried paneer cubes if making paneer and cook little. Lastly add chopped spring onion. If you want you can do coal dhungaar on the gravy as well . But I have only done on noodles .

In a plate remove noodles and put some gravy on top. Garnish with chopped spring onion and serve hot.
