Sizzling Noodles Combo

If you’re a Chinese lover , this is a must try for you.
If you wish you can add 1 tsp ajinomoto to the gravy and noodles ( I havnt used)

For sizzling gravy – firstly marinate 500gm boneless chicken cubes with salt , 1 tsp black pepper powder, 1 tbsp soya sauce, 1 tbsp vinegar , 1 egg 3 tbsp Maida and 1.5 tbsp corn flour . Mix well and let marinate for half hour then deep fry the chicken till golden and keep aside .

Heat a Kadhai and add some oil , put 1.5 tbsp chopped garlic , 1 tsp chopped ginger , 1 small chopped onion , and 4-5 chopped green chilli. Sauté well till fragrant and add , 1 tsp white pepper powder, salt , 3 tbsp soya sauce, 2 tbsp oyster sauce, 2 tbsp red chilli sauce, 2 tbsp green chilli sauce, 1 tbsp vinegar, 1 tbsp sugar and add the fried chicken and sauté . Add corn flour slurry of 2 tbsp corn flour mixed with 1 cup water . Then mix and add 2 cups of mix veg of your choice ( I’ve put broccoli, carrot , capsicum and onion …. You can also put mushrooms, zucchini, red and yellow bell peppers , baby corn etc) cook well till veggies are slightly cooked but not soft . Add water if you need to adjust consistency and lastly add some chopped spring onion. Then switch off heat.

For noodles- boil around 400 gm Hakka noodles and keep aside .

In a Kadhai or wok heat some oil and add 1 tbsp chopped garlic , I tsp chopped ginger , 2-3 chopped green chilli and sauté , add very little julienned veggies ( carrot , cabbage and capsicum)stir fry slightly and add salt , 1 tsp white pepper powder, 2 tbsp soya sauce, 2 tbsp red chilli sauce, 2 tbsp green chilli sauce, 1 tbsp oyster sauce, 1 tsp vinegar. Mix and add the boiled noodles and stir fry well for 2 mins , lastly mix in some chopped coriander and switch off heat.

Serve hot in a plate by spreading noodles on the plate and putting a generous quantity of the gravy in the centre.
