Shezwan Chicken Fried Rice / Noodles / Triple Shezwan

Boil 2 cups of rice ( or about 400 gms of spagetti … I prefer using spagetti for my chinese instead of reqular hakka noodles)along with salt , little red colour and 4 tbsp oil. Strain and keep aside.

In a kadhai heat oil and fry 2 scrambled eggs(beat 2 eggs with 1 tbsp milk , salt , pepper and little spring onion)  remove the cooked  egg keep aside.  In the same oil  add 2 tbsp chopped garlic , 1 tsp chopped ginger , 1 small onion chopped , 1 green chilli chopped , saute and add salt and 1 stock cube , saute and add about 150 -200gms  chicken cut into small cubes , saute little and add about 100 gms each of sliced cabbage , capcicum and carrot . Saute well and add the red paste (grind together , 3  Kashmiri red chillies with , half cup ketchup , 2 tsp vinager , 2 tbsp soya sauce , 3 tbsp chilli sauce , 1 tbsp sugar , 1 tsp white pepper powder ,salt ,And a pinch of red colour to a fine paste.) Add 1 sachet of chings shezwan rice masala (this is optional .. you can skip if u like , but it really enhances the taste)saute well and mix in the cooked rice . Cook on low heat coverd for 2-3 mins then lastly mix in lots of chopped spring onion and the eggs that we had made in the start. Serve hot as it is or with shezwan chilli (tip … you can also make a mix of rice and noodles , just boil 1.5 cup of rice and 100 gms noodles separately and follow the same recipe … Serve with shezwan chilli and fried noodles and your triple shezwan rice is ready)
