Shezwan Chicken Frankie
Hey guys im back to posting after a long break , so this is for all u frankie lovers.
For the roti….. take 2 cups of maida and mix in half cup oil and salt , mix well to form crumbs , add enough water to knead a soft dough. Keep aside covered for half hour and roll into chapatis, grill on tava just for 2 sec on each side and remove . Keep the rotis covered.
For the chicken filling …. boil 500 gms chicken with 1 tbsp garlic paste, half tbsp ginger paste , 1 tbsp tandoori masala , salt , 1 tsp kasoori methi . Boil till done and keep a little stock reserved. Shread the chicken to chunks and keep stock aside.
Now in a kadhai take 2 tbsp oil , add 1 tsp chopped garlic , and saute , add 5 tbsp ketchup, 3 tbsp red chilli sauce , 1 tsp soya sauce , 1 tsp vinager , pinch of red colour , 2 tbsp shezwan sauce , 1 tsp sugar , 1 tsp white pepper powder and saute. Add the stock and bring to boil, add the shreaded chicken and cook till dry. Lastly mix in some chopped corriander.
Beat 5 eggs with half teacup milk, salt , pepper and some chopped coriander and keep aside.
In a pan put oil , a big spoonful of egg , and place a roti on top , cook well on both sides till egg is completely cooked .
Remove in a plate and place the chicken filling in a line and sprinkle some chat masala on top , followed by some chopped onion and coriander. Finally grate lots of cheese on topand roll and serve immediately.
