Shahi Tukde / Pav Ka Halwa
This is one of my fave Indian desserts ( This sentence u might read in most of the recipes as I am a big time foodie specially when it comes to desserts🙈😋 )
For the milk … heat 1 litre of milk and add 1 cup of sugar 150 gm of khoya , pinch of saffron , half tsp elaichi powder and 3 tbsp masala milk powder ( just grind a fist each of kaju badam pista to a rough powder and store in fridge for many desserts ) keep cooking and stirring the milk for 10 mins till the milk is reduced and thick .
For this u need about 10 slices of bread cut diagonally to triangle ( If u want can remove the sides but I personally like the sides so I don’t remove)
Fry the bread triangles till golden ( you can fry in ghee or oil) and spread in a tray . U can put slices on top of each other if u wish or make single layer trays.
Pour the hot cooked milk on top and let the bread soak the milk well . Sprinkle sliced nuts and serve .
Ps. This is just a fancy way of serving , what I usually do is soak the fried bread in the vessel I cooked the milk . So I can heat the halwa whenever I want to serve .
You guys must have seen that the bhatyaras have a really thick creamy layer on top of the soaked bread slices if u want To make it that way then use 1.25 ltr of milk for the recipe and reserve a cup of cooked milk aside . Now to this add 1 tbsp custard powder and 1 pinch yellow colour dissolved in half cup milk and cook till thick . Spread this on soaked bread and serve .
I personally like the traditional halwa, without this layer you can make according to ur preference.
