Samosa Fillings

I have already posted keema samosas and meethey samosey b4 . Here are a few more fillings you can make for samosas during Ramadan and otherwise .

Chicken and cheese …. marinate 500 gm chicken cubes (very small pcs) with juice of 1 lime , salt , 1 tsp white pepper powder , 4 tbsp red chilli sauce , 1 tsp chilli flakes and 1 tbsp garlic paste . Let marinate for half hour and cook till done and dry . Let cool and mix in 1 cup of grated cheese and some chopped coriander . Mix well and stuff the samosas.

Potato filling … in a kadhai heat 2 tbsp oil , add a pinch of hing , few curry leaves sliced , 1 tsp grated ginger , 3-4 chopped green chillies , half tsp haldi powder , half tsp sugar and salt . Saute little and mix in 500 gm boiled and mashed potatoes and a fist of boiled green peas . Mix well and switch off heat . Mix in juice of half lime and lots of chopped coriander. Stuff in samosa

Chinese filling.. .In a kadhai put oil , 2 tbsp chopped garlic , 1 tsp chopped ginger , 1 tbsp chopped onion and saute .Add  about 250 gms of finely chopped chicken , salt and 1 tsp white pepper powder .cook till chicken is half done then Add about 150 gms of cabbage sliced, 1 big carrot and 1 big capcicum cut to julienne. (Thin n long strips). Saute for 2 mins and add 2 tbsp soya sauce (don’t cook much as we don’t want the veg to cook completely and release water . Or else your rolls will become soggy) add a fist of boiled noodles and switch off heat . When cold mix in some chopped spring onion. Stuff in samosa

Corn cheese … in a bowl mix together 1 cup crumbled paneer , half cup grated cheese , half cup boiled corn , 4 chopped green chillies , some chopped coriander , salt and half tsp white pepper powder. Mix well and stuff samosas
Spicy chicken …. boil 500 gm chicken with 1 tbsp garlic paste , 1 tsp ginger paste and salt. Shread and keep aside . In a kadhai heat 1 cup water and add 2 tbsp tandoori masala , 1 tsp garam masala powder , 2 tsp red chilli powder , 1 tsp dhanya powder , half tsp zeera powder , half tsp white pepper powder pinch of red colour and salt . Bring to boil and cook for a min . Then add the shredded chicken and cook till completely dry . Let cool and mix in 2 chopped onions. Lots of chopped coriander and mint and 1 tsp chat masala powder. Stuff in samosas.
