Rumali Roti
So guys there are 2 ways i make rumali roti , both are very different in taste . I prefer mixing a bit of wheat flour with maida , u can make it with only maida or only wheat as well.
Method 1 ….. take 2 cups of maida mix 1 cup wheat flour , salt and knead with a mix of equal quantity of milk n water to a soft dough , lastly apply little oil and knead well. Keep aside for half hour .
Method 2. Take 2 cups of maida , mix 1 cup wheat flour , salt and 2 medium boiled potatoes grated finely , mix well and knead to a soft dough with water , lastly apply oil n knead . Keep aside for half hour
Roll to a thin roti with help of flour . And roast on inverted iron kadhai for a few seconds on each side . This is how its professionally made.
( dont worry if u dont have an iron kadhai u can simply make it on ur basic roti tava as well. ) i prefer cooking my rumali a little more by pressing with a cloth like we do for normal roti but a little less than that.( as eating raw or hardly cooked flour is not good for health ). Fold like we fold a rumaal (napkin) and keep covered . Serve hot with your fave gravy.
