Restaurant Style Tomato Soup
If you’re a tomato soup lover . This recipe should not be missed .
Simply heat 2-3 tbsp oil in a pressure cooker put 1 tej patta , sauté half small sliced onion and 8-10 cloves of garlic roughly chopped . Then add 2 inch pc of beet root chopped . Sauté slightly and put 500g roughly chopped tomato ( desi tomato r preferable)
Sauté and add salt , 1/4th tsp dry basil / mix herb / oregano , half tsp red chilli powder , half tsp black pepper powder . Sauté and pressure cook on high heat till first whistle and keep on low heat for 5 mins.
Once done , remove tej patta and blend to paste .
Meanwhile in a vessel take 2 tbsp butter and sauté 1.5 tbsp maida till fragrant Switch off heat and put 1 cup tomato ketchup, 3-4 tbsp red chilli sauce and 1 cup water . Mix and keep aside .
Once the tomatoes are blended , strain it into the vessel and cook . Add water to adjust consistency as per your liking . Cook for 3-4 mins and serve hot
You can enjoy this soup as it is or with a drizzle of cream, or some fried or toasted crouton (cut bread to small cubes and either fry or toast with little oil till golden and crisp)
