Pot Rice

This is my own version of pot rice . Very different from other recipes , hope you guys like It❤

For the rice … in a vessel heat oil and fry 1 scrambled egg and remove . In the same oil put 2 tbsp chopped garlic , 1 tsp chopped ginger , 2 tbsp chopped onion , 2 chopped green chillies . Saute and add half teacup soya sauce , 4 tbsp redchili sauce , 1 tbsp vinager . Saute and add 2 cups of boiled basmati rice and saute well . Lastly add some spring onion and little chopped coriander and toss.

For the gravy … in a plate put  some Julienned capcicum ( you can use 1 colour or all 3 colour if you have ) 1 small onion sliced , 4-5 fresh red chillies sliced to fat pcs (put green if you don’t have red) , 5-6 baby corn cut into fingers , half carrot cut into fingers , very little sliced cabbage , 1 small broccoli cut into pcs , 4-5 mushroom cut into 4 pcs and a cup of sliced spring onion .Prepare this plate n keep aside .

For chicken … marinate 500 gm boneless chicken pcs with salt , 1 tsp white pepper powder , 1 tsp garlic  paste , 1 tbsp vinager , 2 tbsp red chilli sauce , 1 tbsp soya sauce , 1 egg , 4 tbsp maida and 2 tbsp corn flour. Mix well , let marinate for half hour and deep fry till golden . Keep aside.
In a vessel heat little oil add 2 star anise (badia)add 2 tbsp chopped garlic , 2 tbsp chopped onion , 1 tsp chopped ginger 2 chopped green chillies , saute and add half tea cup soya sauce , half tea cup red chilli sauce , 2 tbsp vinager , 2 tbsp oyster sauce , 2 tbsp sugar , salt , 1 tsp white pepper powder , saute well and slurry of  3 tbsp cornflour  mixed with 2.5 cup water , cook till thick and add the veg plate we have prepared earlier , cook for 2-3 min and add the fried chicken and cook for 2 min .

In a tray or oven proof bowl put a thick layer of rice , followed by lots of chicken gravy . Bake in oven at 180 degree for about 10 min and serve hot . If you don’t have oven then you can make in any tray or flat vessel and cook on very low heat covered for 5-7 min.
