Pineapple Halwa

Take 1 big ripe pineapple and chop it into fine pcs ( i simply just chopperise in chopper) . Put the chopped pineapple and half glass water in a pressure cooker and cook on high heat till first whistle and low heat for 6-7 mins . Once cool open the lid , and dry out any excess water . Then add 4 tbsp ghee and sautee , add 1 cup sugar and cook for 2-3 mins , add pinch of saffron , pinch of yellow colour , half tsp elaichi powder and cook more , add 1 cup mawa and cook 2-3 more mins . Finally add 250 gms crumbled sponge cake and cook for 2 more min. Switch off heat ( i prefer taking sponge from bakeries like modern , imdadiya etc compared to the mongenis sponge or other brands ) pour in a tray and sprinkle some mawa and sliced nuts on top . Serve hot or at room temperature as per your desire . Hot halwa with cold vanilla icecream is a combination to die for 🤤
