Pina Colada Cupcakes

This is a super tasty and refreshing cupcake that u bakers should surely add to your menu .

For cupcakes
In a bowl  put half cup of milk and mix in 1 tsp vinegar and keep aside (this is your buttermilk)

In a big bowl mix together half cup of oil (I use normal sunflower oil), 1-1/4th cup maida , 1 cups castor or powderd sugar ,1 tsp baking soda half tsp baking powder, 1 egg , 1 tsp vanilla or pineapple essence , the half cup of buttermilk we made previously , little yellow color and half cup of hot water just beat/ whisk everything together and bake in preheated oven at 180 degree for 10-12 min or till done. Note that all ovens differ in temperature and baking time . You know your oven more than me so bake accordingly . Check with toothpick and let cool (makes 25 cupcakes )

For cream
Grind together 5-6 slices of pineapple chopped , 4 tbsp coconut milk powder , 6 tbsp sugar and little yellow color to a fine paste . Keep aside

Beat 1.5 cup of whipping cream to stiff peaks and beat in the prepared pineapple purée .

Pipe the cream on the cupcakes and garnish with desiccated coconut and pineapple .
