Peri Peri Burger

If ur a burger fan, dont miss out on this one.
For Peri peri mix , In a grinder blend together 4 tbsp chilli flakes , 1 tbsp chat masala , 1tbsp red chilli powder , 2tsp salt , 1 tbsp garlic powder ,1 tsp white pepper powder, 1 tbsp oregano. Blend to a fine powder and keep aside .
In a bowl mix together  half cup mayo , 6 tbsp water, 2 tbsp peri peri mix. And keep aside.
For the chicken . . . Cut 500 gm chicken to thin squares the size of your bun . Hammer the chicken a little(This makes the marination go deep inside and make the chicken really juicy ) and marinate with  1 tsp garlic paste , 1 tbsp vinager, 4 tbsp chilli garlic sauce , 4 tbsp hot sauce , 1 tsp chìlli flakes , half tsp white pepper powder, 4 tbsp maida , 2 tbsp corn flour, 1 egg and few spoons of water just to coat chicken well with all ing. Marinate for 2 hrs.

In a bowl mix together 10 tbsp of maida, 4 tbsp corn flour , 1 tsp garlic powder, 1 tsp chilli flakes , 1 tsp oregano, half tsp white pepper , 6 tbsp fresh bread crumbs or Panko and salt to taste.
Coat the marinated chicken  really well with the flour mix by pressing  well . Dip in cold water for a second  and coat again with flour mix .
Deep fry on medium heat ( cover and cook) till done.
Sprinkle  the fried chicken  generously  with the peri peri mix .
On the burger bun firstly  put the chicken  , followed by peri peri mayo,  some pickled  jalapenos  and sliced iceberg  , cover with the top of the bun and serve hot . U can also add cheese  slice if u wish.
