Paneer Paratha
This is a delicious recipe that u can have for breakfast lunch or dinner.
For the dough . Knead together 1 cup wheat flour , 1 cup maida with salt , 1 pinch baking soda , 2 tbsp rava and knead with enough water to make a soft dough , lastly apply little oil and keep aside .
For the filing … in a bowl crumble 300 gms of paneer , mix in some chopped coriander , 1 chopped green chilli , 1 tsp red chilli flakes, 1 tsp chaat masala , salt mix well and keep aside.
In a small vesel heat little oil , and fry 1 chopped onion, 1 chopped green chilli , some chopped hara lassan when in season , 1 tsp kasoori methi , pinch of hing . Fry well till golden , and mix half tsp haldi and half tsp @shahi_garam.masala and cook for few sec. Pour this on top of the paneer and mix well .
To assemble… roll 2 rotis and keep aside. On top of 1 roti spread the paneer filling , slightly apply water on the edges of roti and put the other roti on top.
Slightly press from sides to seal. And fry with ghee or butter or oil. This way of making paratha gives a nice generous filling in the centre and avoids any mess and fillings bursting out .
Serve hot along with dahi, achaar or chutney.
