NF Special Pot Rice / Chefs Special Pot Rice

Ps I’ve made a hugeeeee batch like always . Below is recipe enough for 6-8 people
For Shezwan combination rice
Firstly make sauce mix -grind together , 3 Kashmiri red chillies with , half cup ketchup , 2 tsp vinager , 2 tbsp soya sauce , 2 tbsp chilli sauce , 2 tbsp green chilli sauce , 1.5 tbsp Shezwan sauce ,1 tbsp sugar , 1 tsp white pepper powder ,salt ,, 1 tsp ajinomoto And a pinch of red colour to a fine paste
Boil 200 gm Hakka noodles and keep aside
Also boil 1.5 cup of basmati rice and keep aside
Now in a wok heat oil and fry 2 beaten eggs and scramble it . Add 2 tbsp chopped garlic , 1 tsp chopped ginger , 1 small onion chopped , 1 green chilli chopped ( I have simply chopperised all together) sauté well and add v little of julienned cabbage , carrot and capsicum. Stir fry little and add the boiled noodles and rice along with the sauce mix . Lastly mix in some spring onion and do coal Dhungaar.
For exotic chicken chilli gravy
Firstly mix 6 tbsp soya sauce , 4 tbsp red chilli sauce , 4 tbsp green chilli sauce, , 4 tbsp oyster sauce , 1 tbsp vinager , 1 tbsp sugar , 1 tsp white pepper powder , 1 tsp ajinomoto and little salt.
In a wok heat oil and sauté 2 tbsp chopped garlic , 1 tsp chopped ginger , 1 small onion chopped , 1 green chilli chopped ( I have simply chopperised all together) sauté well till fragrant and add 250 gm chicken strips , sauté and add the sauce mix , mix well and add in 2 cups of cut exotic veg ( I have used broccoli , baby corn , bell peppers , zucchini and onion ) cook well and add in slurry of 2 tbsp corn flour mixed in 1 cup of water . Cook till thick and lastly add little chopped spring onion .
To assemble take a tray or pot and put some rice and noodles and generously top it with the gravy. Bake in oven for 10 min at 230 degrees or you can serve it directly also. Enjoy along with some fried noodles or as it is.
