Mutton Seekh Paratha
Isn’t this something all of us love . Lets make this at home with full hygiene and best ingredients.
Wash 500 gms of mutton mince and squeese out all excess water , mix in half tsp tenderizer, 1.5 tbsp each of ginger n garlic finely chopped , 5 chopped green chillies , 4 slices of bread broken to pcs , 3 tbsp roasted chana aata , 1 egg , some chopped coriander n mint , juice of 1 lime , 1 tsp red chilli powder, half tsp haldi , 2 tsp dhanya powder , half tsp zeera powder , 1 tsp garam masala powder , 2 tbsp shaan seekh kabab masala , 1 onion chopped and salt to taste . Mix all this well and grind in small batches to a fine mince ,do koyla dhungaar and let marinate for a few hrs and make seekh with help of greased hands on a skewer. Fry with very little oil on a nonstick pan . ( if u feel the seekh is breaking , just add some more roasted chana aata)
For paratha i make a really simple dough with wheat flour n salt , knead with water n lastly apply oil. And shallow fry till golden n crisp . U can add some maida and 2 tbsp rava for crispness . But i avoid maida wherever i can so have not used it.
For the chutney simply grind together some coriander and mint with a few cloves of garlic , salt and green chillies and a dash of zeera powder .
Serve the seekh along with chutney , paratha , lime and sliced onion.
