Mutton / Chicken Pakoras
In a pressure cooker(or kadhai if making chicken) , cook 500 gms on boneless mutton cubes with 1 tbsp ginger paste, 1 tbsp garlic paste , 1 tsp green chilli paste , 2 tsp garam masala powder and juice of 1 lime and salt to taste. Cook till tender and mix in some chopped coriander.
In a bowl mix 6 tbsp chana aata , 1 tsp red chilli powder, a pinch of baking soda , salt to taste and some chopped coriander, add enough water to make a thick paste (tip .. mix with your hand for 5 mins … this makes the fermentation better)
Dip each pc of meat in the batter and deep fry till golden. Serve hot with chutney or ketchup.
