Mutton / Chicken Doodh Pulao

As usual had no time to present the dish .
Had this from a bhatyara and recreated it and would surely recommend all of u to try .

Firstly in a vessel put a few bones of chicken or mutton , 3 glass water , 1 tbsp crushed Dhanya, half tbsp zeera , half tbsp saunf , 2 green chilli , 3-4 cloves of garlic , half sliced onion and some chopped coriander. Cook till 5 mins or till almost 1 glass of water Is reduced. Keep aside

Heat oil in a vessel ( or pressure cooker if making mutton ) put whole garam masala, 4-5 slit green chillies , 2-3 dry red chilli, few curry leaves and sauté , add 1 big chopped onion and fry till light golden . Add 2 tbsp garlic paste , 1 tbsp ginger paste , half tbsp green chilli paste, and sauté for 2-3 minutes till color changes , then add 500 – 750 gms of meat and salt and sauté for 2-3 minutes, add half cup dahi and cook till the meat is tender . Then add the prepared stock and 1 glass of milk and some chopped coriander. Bring to boil and add 2 cups of washed and soaked rice and diced potatoes as much as u like . Cover and Cook on high heat till water dries . Then sprinkle lots of chopped coriander on top and keep on dum for 5 mins . Give a stir with light hands and serve hot with your choice of kachumber.
