Mutton / Chicken Baida Roti

One more tava item up for u guys .
For the dough simply knead a mix of 1 cup each of maida and wheat flour ( it’s easier to work with when wheat flour is added , if u wish u can use only wheat or only maida). Knead with salt , a pinch of baking soda and water to a soft dough , lastly apply some oil . Keep aside .

In a kadhai put 2 tbsp oil and put 500 gm of mince , saute and add 2 tsp each of ginger garlic paste , salt and half tsp white pepper powder. ( This is one version , for second , to the same recipe add 1 tsp red chilli powder , half tsp haldi powder , half tsp zeera powder , 1 tsp koota dhanya ) cook well till dry and let cool . Mix in lots of chopped coriander and mint, juice of 1 lime , 2 chopped onion .
On on a clean kitchen table put some oil and roll a ball of dough to a big thin square . In the centre of the big square … Make a small square with the keema mix and spread half beaten egg on top of that (u can add 1 whole beaten egg also if u wish) now fold from all 4 sides to make a square . Lift really carefully and put on hot tava with little oil .. ( You can also make mini versions of these with spring roll sheets if ur not comfortable working with dough )
Grill well on both sides and keep pressing so the egg cooks well inside . Cut into pcs and serve hot with ketchup or green chutney.

If u want to store these then just half grill and freeze in a square container layering foil between each layer . Just remove few hrs b4 and grill well till done.
