Mushakkal Salad / Messe Platter

Hummus recipe is already posted on my page.
For baba ghanoush and mutabal we need a big brinjal around half kg (bharte wala baingan) and poke it all over with a fork , grease with little oil and roast it on very slow flame till its cooked well . Put the roasted baingan in water to easily remove the skin . Mash the baingan well and keep aside we will use half of it for mutabal and half for baba ghanoush.
For baba ghanoush…..
In a bowl mix together the mashed brinjal , salt , 6 tbsp olive oil, 1 small chopped onion, 1 small chopped tomato , some chopped coriander, juice of 1 lime , half tsp garlic paste and 2 tbsp tahini paste . Mix well and keep aside .
To be honest for mutabbal what i do is just make a big batch of baba ghanoush , divide it into two , add dahi and little salt and slightly blend with hand blender . Im sharing the actual recipe so u can follow the authentic way or just go ahead with the nazia farhan way.
For muttabal ….
In a bowl mix mashed brinjal , 100 gms dahi , 2 tbsp tahini paste, 6 tbsp olive oil, half tsp garlic paste and salt . Mix well and keep aside.
For fattoush ( again the nazia farhan version🙈😅)
In a big bowl mix together , 1 small iceberg lettuce chopped , 1 cucumber chopped , 1 tomato chopped , 1 small onion chopped and some chopped coriander . Mix in juice of 1 lime , salt, 4 tbsp olive oil and a pinch of pepper , mix well and keep aside . Just before serving mix in 1 pita bread cut into cubes and fried till crisp.
Plate well and drizzle some extra olive oil on top and some sliced olives.
