Memoni Dhokre

This recipe has been requested alottttt by many of u . But to be honest never got the time to shoot in between dhokra prep. So this time I thought I’ll just post with the final look . As many of you love making this in winter. As Bajra aata and fresh veggies in winter have a v good taste also a lot of health benefits .
Above again is a huge batch in the video . Below I’m giving recipe of a small batch.

Firstly soak overnight a handful each of chana , cholai , Vatana, choley ( or you can also tell your Kirana shop to give u mix bhel 125 gms . Just make sure to use big pulses n not small ones like moong n all ) next day pressure cook this with little water for 2 whistles and keep aside.

Now to make muthiya mix together- 250 gm Bajra aata , 2 tbsp rice flour , 2 tbsp jowar flour , salt , 4 tbsp oil and 1 tbsp ghee , mix well till a crumbly texture then …
Now in a grinder jug put 1 tbsp whole Dhanya , 1 tsp zeera and grind and add 4-5 cloves garlic , 1 slice ginger , 2green chilli and grind more . Now chop and add half coconut and grind with very little water to a thick paste.
To the aata mix , add the prepared paste along with , 1 small methi chopped ( this is very healthy, if you don’t get this then use 1 tbsp Kasoori methi or handful of regular methi chopped ) also add around 2 tbsp of chopped hara Lassan ( as this is in season it tastes best with hara Lassan , if you don’t get in your locality then skip ) , add half tsp red chilli powder, 1/4th tsp haldi , some chopped coriander and mint , half chopped onion and 1 tbsp imli pulp . Mix everything well and make muthiya . The muthiya should not be v hard or v soft . It should be of medium texture . So if you need add a dash of water . Make all muthiya and keep aside.
Take 2 muthiya from this and in. A bowl break the muthiya and add little water to make slurry. Keep this aside.

Now for the main gravy in a big vessel heat oil and add few curry leaves , 1 onion chopped and fry till almost golden . Add 3-4 big finely chopped tomatoes, salt and cook till soft . Add 2 tbsp garlic paste , 1 tsp ginger paste , 1 tsp green chilli paste and sauté well . Add paste of 1 coconut and sauté more , add 1 tbsp Dhanya powder , 1 tbsp zeera powder, half tsp haldi powder, 1 tsp garam masala powder, 1 tbsp red chilli powder . Saute and add some chopped coriander and mint . Saute really well and add the half cooked pulses . Saute really well and start adding veggies ( you can use your choice of veggies, as much or as little u like , just make sure to cut big pcs or else they will get mashed ) first u will put veggies that take longer to cook , first put a handful each of gavar, walpapdi, and French beans and sauté well . Add 2 -3 cups water and bring to boil and cover and cook 5 mins . Then add 250 gm potatoes , 1 carrot cut into thick pcs , 100 gm mini baingan ( just make slits and put ) , 2 drumsticks peeled and cut to big pcs , sauté and add water if needed and cover and cook more 5 mins or till veggies r almost cooked .
Make sure there is enough water to nicely soak the muthiya . If there’s less water then add water and bring to a boil . Slowly add the muthiya and cook on high heat for a minute and then cover and cook on low heat for 10 mins . When you mix , mix with very light hands so that you don’t break the muthiya.
Now add the slurry we had made with the muthiya in the start . Make sure u mix with very light hands . Let the gravy cook for 10 mins and mix with light hands in between.
Heat little oil in. A small vessel and switch off heat . Add half tsp red chilli powder and pour this baghar on the dhokra . Serve hot and enjoy yummy dhokra this winter with Nazia Farhan recipe.
