Matilda Cake

This cake has been trending from Parkers in Dubai and after seeing the craze a few restaurants in India have started as well .
But u don’t need to go anywhere u can make it at home soooo easily . And trust me this is just tooooo gud.

For the cake
First mix half cup milk and 1 tsp vinegar and keep aside for half hour .( this is our buttermilk)
In a big bowl mix together half cup of oil (I use normal sunflower oil), 1 cup maida , 1 cup castor or powderd sugar ,1 tsp baking soda , half tsp baking powder, 1/4tg cup cocoa powder ,1 egg , 1tsp vanilla essence , the half cup of buttermilk we made previously , and half cup of hot coffee ( boil half cup of water with 1 tsp coffee powder and add it boiling hot) just whisk everything together and bake in preheated oven at 230 for 15 min or till done. Once cool cut into desired shape with knife or cookie cutter ( the original viral Matilda cake is triangular but such a cutter is not readily available. It is custom made . So for the same reason I have used a 4 inch round cookie cutter . If you do not want to present it like a pull me up version, u can just cut into squares and pour the sauce in serving bowl on the cake)

For the fudge sauce
In a vessel heat 100 gm butter till melted , add 200 gm cream , 1/4th cup milk , 1 tin (400 gm ) condensed milk and cook til it boils from sides . Add 150 gm chopped dark chocolate and cook till melted . Then add 3 tbsp cocoa powder and mix well and cook using a whisk till thick and lastly add ( the sauce will get much more thick after cooling down so adjust consistency accordingly . I like it slightly thick so I have kept that texture, Parkers in Dubai has it on the thinner side so u can make as you like )

To assemble take a plate and in a cookie cutter put a cake slice followed by a tbsp of fudge sauce , another cake slice and lots of fudge sauce . Sprinkle cocoa powder and keep the Matilda cake pic of u like and serve immediately.

Or else in a bowl just put a square cake of brownie size and put a few spoons of fudge sauce and serve.
