Mango Cheesecake
Season of my faveeeeee fruit has arrived and I can’t get over it ,🙈 I have already posted mango triffle and cream ( it’s part of my strawberry n fruit cream recipe) . You can also use my strawberry pie recipe to make mango pie . Just use mango puree instead of the strawberry crush.
Grind together 3 big packets of digestive biscuits along with 4 tbsp butter melted (first measure then melt). Layer it in a tray or glass bowls and press with the back of a glass to press and level the surface.
In a vessel beat 500ml of tropolite cream till soft peaks and beat in 180 gms of cream cheese (you can add more if u like the cheezy flavor) beat in 1 cup of powderd sugar , 1.5 tsp vanilla essence and 2 cups of mango puree . And pour this on top of the digestive layer . Level the surface with a spatula and top with a generous layer of mango cubes . Chill for 1-2 hrs . Easy peasy and delicious mango cheesecake is ready to serve.
