Mango Cake
Mango season is almost about to say goodbye , before that lets make this super moist and delicious mango cake.
For the sponge use my basic vanilla sponge recipe . Bake the sponge and keep aside to cool.
In a big bowl take 1 cup of tropolite ( whipping cream) and beat until stiff peaks .
Grind together 2 mangoes with 5 tbsp sugar to a fine paste and beat it along with the cream . ( if u like u can also use plain white cream)
Cut the sponge into 3 layers . On each layer drizzle some mango juice or water generously . Spread a layer of mango cream on top. Sprinkle lots of diced mangoes and repeat the same process again . Cover the cake nicely with mango cream and decorate as u like . I have somehow managed to click the inside pic from the last few bites remaining . This turns so moist n delicious , it will be gone in seconds . You can see the sponge bubbles on the cake that shows how moist the cake turns . Also ive made a 2 kg cake , the recipe above is for 1 kg.
