Makhni Khepsa
So guys this recipe is a mustttttttt try . I got uncountable complements for this creation .
Also I’ve made a huge batch of, but posting recipe below enough for around 6-8people .
In a vessel heat oil and add half tsp zeera , 2 elaichi , 1 small roughly chopped onion , 2 big roughly chopped tomato , 3 green chilli , a handful of kaju , 8-10 big cloves of garlic , 1 inch ginger sliced . Sauté and cover and cook for 5 mins or till soft . Then add 2 tsp red chilli powder , 1 tbsp Kasoori methi , 2 tbsp tandoori masala , half tsp haldi , half tsp Dhanya powder, half tsp zeera powder , 1 tsp garam masala powder , salt to taste and a pinch of red color . Sauté and add 250 gm dahi , some chopped coriander and cover and cook till oil comes up . Let this cool then grind in small portions to a fine paste .
In a vessel take some oil and butter and add the gravy paste . Bring to boil and add 1 kg chicken and cover and cook till done and thick. Then add half cup cream , 1 tbsp honey and cover cook little till oil comes up . Do coal dhungaar and keep aside .
For the rice . In a vessel heat some oil and ghee add half tsp zeera , 2 elaichi , 1 badi elaichi , 1 badiyan broken to pcs , 3 laung , 2-3 pc dalchini and 2 tej patta . Let this splutter then add 1 big sliced onion and fry till almost golden . Add 1 chicken stock cube ( use chicken bones if you don’t want to use cube) fry more . Then add fresh grinded paste of 2 green chilli , 2 thin slice ginger and 4-5 cloves garlic . Add this paste and sauté well and add half tsp garam masala powder Sauté well and add 2 slit green chilli a generous handful of chopped coriander and mint and sauté . then add 5cups water , salt and 500gm of soaked basmati rice . Stir with light hands and cover and cook on high heat till water is dry . Then in a bowl mix 4-5 tbsp water , half tsp kewra essence , and yellow color . Drizzle this on the rice and sprinkle little red color . Cover and keep on dum for 5 mins . Stir with light hands and keep on dum 5 mins more n stir with light hands.
To serve – remove rice in a tray or thaal and garnish the edges with sliced veg. Put some chicken and gravy on top. Drizzle some fresh cream , sprinkle some chopped coriander and serve hot.
