Lucknowi Chicken Biryani

Guys this is a must try recipe that u can make in chicken mutton or beef . It’s surely a dawat dish .
I have made a big batch in the video . Below is recipe for 1 kg meat .
In a vessel heat oil and fry 2 big sliced onions till golden . Add fresh paste of 15-20 cloves of garlic ( around 2 tbsp garlic ), 1 inch sliced ginger ( around 1 tbsp ) and 10-12 green chilli ( making fresh paste will take the taste to next level )
Sauté well and add whole garam masala , half tsp red chilli powder , 1 tsp Dhanya powder , 1.5 tsp garam masala powder , 1/4th tsp haldi powder and salt to taste . Sauté and put 1 kg meat . Sauté and put 1 cup beaten dahi . Cover and cook till done . Lastly add 1 cup milk and 1-2 drop kevra essence . . Cook till the gravy comes to a boil ( the gravy consistency should be on the thin side )

For rice boil 750 gm soaked basmati rice with salt and whole garam masala till 50-60 percent cooked . Strain and keep aside .

In a vessel layer the boiled rice and gravy to 3-4 layers . On the final rice layer put some saffron soaked in warm milk . Few tbsp of ghee and yellow color . Keep the biryani vessel on a tava and cook on high heat for 15 min and low heat for half hour . Switch off heat and let rest for 14 min and stir with light hands . Serve hot with raita

For raita simply grind 1 small onion , 4-5 green chilli , a handful of coriander and mint and 1 cup dahi , salt and 1 tsp chaat masala to paste.
