Laal Akni (Red Pulao)

In a vessel heat oil , add whole garam masala , few curry leaves  and 2 onions chopped . Add salt to taste and saute till golden . Add 3 chopped tomatoes , 2 tbsp garlic paste , 1 tbsp ginger paste (use 1.5 each if making mutton) saute till tomatoes are soft then add .. 2 tsp red chilli powder , 1 tsp haldi powder, 2 tsp dhanya powder , half tsp zeera powder , 1 tsp garam masala powder ,4 tbsp dahi ,juice of 1 lime  and some chopped coriander and mint , saute well then add 750 gm chicken and potatoes , saute and add 4 cups of water , bring to boil and add 2 cups of  washed and soaked basmati rice , 4 green chillies slit . Cover and cook on medium high heat  till no water remains , then put on dum on very low heat for 10 min. Put lots of coriander and mint and stir well with light hands .serve hot with dahi kachumbar or lime kachumbar .

Tip. When making mutton akni or pulao you have to pressure cook the mutton in the gravy till it’s almost done and then add potatoes and rice . You can also add green peas along with the rice.
