Kunafa

Ive got over a hundred requests for this one in just one week . Finally i made it with basic seviya , really wanted to show u guys using the kunafa dough , but wasn’t able to get it coz of lockdown.
This can be made with any seviya the basic roasted one and also for seviya its better to take the bundles that are usually sold in ramadan ( its more soft )
But would highly recommend to use kunafa dough .
Also ive made it with my fave filling, u can follow the same or use only cream cheese , or al marai fresh cream , or nestle tin cream , or nutellaaaaaa .
This recipe is for 1 medium sized kunafa or 3 small ones.
In a vessel put 1 cup milk, 2 tbsp cornflour and stir . Switch on heat and cook till really thick , add half cup amul cream , 3 tbsp cream cheese ( i would reccomend kraft cheddar cheese spread ) , 2 cubes of amul processed cheese , and very little mozzarella cheeze ( u can also use only cream cheese or any 2 of the cheese or all three , i recommend using all 3 )
Cook for a min , keep stirring and let cool .
For sugar syrup heat half cup water and half cup sugar and cook along with a generous pinch of saffron . Boil for 2-3 mins and let cool.

Take around 400 gms of seviya and crush with hands into really small pcs ( if using kunafa dough , chopperize it in processor or slice v finely) add half cup of melted butter and mix well with hands .

Take a non stick pan and make a medium thick layer of seviya ( press well to make layer so it doesnt break or cheese doesnt oose out ) spread the cheese filling ( leave little space from sides) and then again spread a layer of seviya . Press lightly. With the help of a spoon or spatula , slightly finish the edges by moving towards the centre ( plz refer to the pic its difficult to explain in words) now switch on heat and cook on low heat for 3-4 mins . Switch off heat . Put a flat plate on top and very carefully turn the kunafa on the plate. Slide the kunafa back in to the pan and cook for 3-4 mins . Turn in back onto the plate the same way ( to save all the hassle you can even make in a tray or mould and bake in the oven at 200 degree for 15 min or till golden.)
Now garnish with pista and drizzle sugar syrup as per your desired sweetness.
Tip ( use hot syrup if using seviya , for kunafa dough room temperature syrup will do )
