Kofta Biryani
For the kofta … finely chopp 1 small onion , 2 green chillies , 8-10 cloves of garlic , 1 inch ginger … (i just chopperise all in my processor ) now mix in 3 slices of bread broken to pcs , 1 egg , 1 spoon malai , 250 gm keema , fist of chopped coriander , 1/4th tsp each of haldi , dhanya , zeera , garam masala and red chilli powder and salt . Mix well and grind in small batches to a fine mince. Make koftas and deep fry and keep aside.
Fry potatoes and keep aside
For barista mix …. in a plate mix barista of 1 onion , and lots of chopped coriander and mint
For the gravy …. grind together , barista of 2 big onions , 4-5 tbsp dahi , 3 tomatoes , 1.5 tbsp garlic paste, 1 tbsp ginger paste, 1-2 green chilli , 1.5 tsp red chilli powder , 1 tsp dhanya powder , half tsp zeera powder , half tsp garam masala powder and salt . Grind to fine paste.
In a vessel heat oil add whole garam masala , let crackle and add the prepared paste along with 1 tbsp sindhi biryani or any biryani masala and juice of half lime . Saute well , add little water and cover and cook well till no raw smell remains .add some chopped coriander and mint and cook for a min more.
For assembling… you need 2 cups of boiled basmati rice.( boil with a tbsp of oil and little whole garam masala)
In a vessel put a thin layer of rice , then the entire gravy , nicely spread the fried koftas and potatoes. Sprinkle the barista mix … put the leftover rice followed by the barista mix, few spoons of ghee , and yeĺlow food colour. Cover and cook on a tava on high heat for 10 min and low heat for 20 mins . Serve hot with dahi kachumber.
