Khawsey

Originally a khao suey is Burmese dish but we  memons have made our own versions of it called khawsey . It is actually made in a different way in evry memon house too .Here is a recipe of my version.

For the kadi.. grind together 4 tbsp chana aata , 4 green chillies , 500 gm dahi , 1 tsp zeera powder and half fresh coconut chopped and salt to taste . Add enough water and cook till thick .

For the mutton …. in a vessel heat oil and add half tsp whole zeera and 2 chopped onions, fry till golden and add 4 finely chopped tomatoes , 1 tbsp garlic paste , 1 tbsp ginger paste (use half tbsp ginger if making in chicken) saute well and add half tsp haldi , 2 tsp dhanya powder , 1 tsp zeera powder , 1 tsp garam masala powder , 2 tsp red chilli powder and salt to taste. Saute well add some chopped coriander and a cup of water . Cover and saute more . Now add 500 gms of boneless chicken /mutton . Cook well till done and semi dry then add juice of 1 lime and some kothmir phudina .

For the noodles … Boil 6 small packets (or 3 big) till done . Wash well after boiling so all the heat and starch is removed (this makes sure the noodles don’t stick) keep half noodles as it is and deep fry half till golden and crisp .

For assembling . In individual plate or bowl first put some noodles , then lots of kadi , then the mutton/chicken . Add the fried noodles then some kothmir phudina , barista , chopped green chilli , grated ginger , chopped boiled eggs and a squeeze of lime (you can also add fried garlic . Just fry garlic slices till golden ) serve immediately.šŸ˜‹
