Khasta Aaloo Paratha

This version of aaloo paratha does take a little time to make but , its worth each effort. Thandiyo me ye sab khane ka maza he kuch aur hai .πŸ˜‹ For the flour :- mix 1 cup wheat flour , and 1 cup maida with 6 tbsp oil and salt , mix well and knead with water to a medium hard dough , lastly apply little oil and keep aside.

For the filling :- boil, peel and mash half kg potatoes and keep aside .
In a pan heat 3 tbsp oil , and fry 2 tbsp chopped onion, 2 chopped green chilli , 1 tsp kasoori methi , few curry leaves sliced ,half tsp chilli flakes , half tsp haldi , pinch of hing and fry well till almost golden , pour this on the potatoes and also add 1 tsp red chilli powder , 1 tsp chaat masala and lots of chopped coriander . Mix well and keep aside.

For assembling :- in a bowl mix some chopped coriander , 1 tsp white til , half tsp kalonji , 1 tsp saunf , some chopped hara lassan if available mix and keep aside,
take a medium size ball of dough and roll into a roti , apply little oil or ghee , and sprinkle with some maida aata , and the coriander mix , fold the roti like a fan and then roll it into a round . Roll again into a thick roti and put a heaped tbsp of potato filling in the centre and close from the sides . Roll with help of some makai aata ( this is to make it nice n crisp u can use maida or cornflour also if u dont have)
And shallow fry till golden and crisp ( yes shallow fry is the key , forget calorie counting when ur making thisπŸ™ˆ)
Remove and serve hot with a dollop of butter πŸ˜‹ and dahi , also have a glass of thandi lassi along to get the dhaba feels ( im sure all the ones trying to diet r gonna kill me for this recipe .πŸ™ˆ).
