Indo-Turkish Shawarma

Another super hit recipe up for u guys , created this fusion shawarma using a bit of turkish technique of saj bread ( aka rumali roti) and indian flavors , which turned to a super hit shawarma recipe . Plz bear the unprofessional and not so well plated pics , u knw how much in hurry i am to serve 🙈
For the chicken tikka …  in a grinder .. grind together , 4 Kashmiri red chillies, salt , 10-12 cloves of garlic , 6 tbsp olive oil , 6 tbsp regular oil , juice of 2 limes and 2 tbsp tandoori masala . Blend to  a paste and apply on 500 gms of boneless chicken slabs along with 2 tbsp dahi ,  and let marinate for half hour . Grill on grill pan with v little oil , once done slightly roast on direct flame over coals to give charred effect. slice the chicken and keep aside
For the saj bread .. knead 2 cups of maida with salt , and mix of milk and water. Lastly apply oil and let rest for half hour. Make slightly huge and thin rotis and half roast and keep aside ( half roast means just roast for a few seconds on each side, not so much as we do for chapati)
For pickle .. boil together a handful each of beetroot , carrot and cucumber juliennes with half cup vinager, half cup water and salt for 5 mins. Let cool and keep aside ( u can store this in a glass jar in the fridge for 2 months)
For the sauce … mix together , half cup dahi , half cup mayonnaise , 1 tbsp chopped pickle( the one we prepared above) 1 tbsp tahina paste , salt and juice of half lime.
Assembling … on the roti first put some sliced cabbage , followed by the pickles , jalapenos , olives , some french fries , sliced chicken , and sauce . Fold from the sides first and then roll . Grill on grill pan or sandwich griller with little olive oil till slightly golden. Serve hot . Does have alot of steps but totally worth it 🤤
