Hyderabadi Baghare Bainga

This is a finger licking recipe for all you Hyderabadi food lovers . You can enjoy this with rice or roti .

I’ve made a big batch. Below is recipe for 250 gm baingan .

Firstly dry roast 8-10 cloves of garlic and 5-6 green chilli till they change color and grind to paste along with little chopped coriander . ( if you want extra gravy then you can also dry roast and grind 1 sliced onion along with this)

Dry roast (roast each ingredient separately) , 3 tbsp peanuts , 1 tbsp white til ,1.5 tbsp desiccated coconut, 2 tbsp whole dhanya . 1 tbsp saunf . Roast and then grind to powder . In this powder mix ,1 tsp red chilli powder, half tsp haldi , salt , the garlic chilli paste , and pulp of around 25-30 gm imli . Mix well . It will form a thick paste .
Make slits on 250 gm baingan and stuff this masala .

Heat oil in a vessel and put half tsp zeera , half tsp rai ,2 pinch methi dana, 1/4th tsp Kalonji , few curry leaves . Let crackle and add a few diced potatoes ( many people don’t put but my family likes potato so I have put)
Sauté little and put the stuffed baingan and cook on high heat ( try to toss it and do less usage of spoon so that baingan doesn’t break )
Cover and cook for 5-7 minutes .
Mix some water in the remaining masala and add it to the baingan . Cover and cook well till baingan and potatoes are well cooked .and oil comes up .
Lastly add some chopped coriander and cook 2-3 min and serve hot.
