Hummus Bil Dajaj

For chicken – marinate 500 gm boneless chicken cubes (preferably thigh ) with salt , 1 tsp each ginger garlic paste , 1 tbsp vinegar , 2 tsp red chilli powder, 1 tsp zeera powder, 1 tsp black pepper powder and 4 tbsp olive oil . Mix well and do coal dhungaar and let marinate for atleast half hour . Then take v little oil in Kadhai and cook the chicken till done and dry .
Ps you can also make the same with mutton , beef or lamb . You will follow the same recipe , just pressure cook the meat . This will then be called hummus bil laham

For hummus – soak 200 gm chickpeas overnight and next day pressure cook with salt and a pinch of baking soda till done ( high heat on first whistle then low heat for 10 min ) strain and let cool .

Then in a grinder jug put the boiled chickpeas , juice of 1 lime ( use half of its big ) 2 tbsp tahini paste ( if u don’t have ready then just roast and grind white til with little olive oil to paste ) , 6-8 cloves of garlic , 6-8 tbsp olive oil , 1 cup dahi and salt ( be careful while adding salt as we have put salt while boiling the chickpeas ) . Grind well to a smooth paste . Your hummus is ready

In a serving plate spread the hummus and put chicken in the centre . Drizzle olive oil and serve with toasted pita bread ( simply toast pita bread with little butter on a pan till golden . Then cut into triangles )

Serve with some olives or pickled veg if u like.
Enjoyyy. This is surely a dish to make for guests.
