Gajar Ka Halwa

Winters are here and so are amazing red carrots,
You guys have put my doodhi halwa on trend mashallah . Heres time to cook gajar halwa my style

For many of u who have asked me if gajar halwa can be made with my doodhi halwa recipe, yes u can make it for a creamy version . But i prefer making my gajar halwa with peace in the traditional way. You can also store this in a airtight container in the fridge for a month. Remove how much u want and heat in the micro or in a vessel. Heres recipe of a small batch you can multiply it how many ever times u want.

Take a big vessel and heat 1 litre of milk ( no tetra packs here plz if ur in india do use full fat milk )
When it comes to a boil put on very low heat and let cook for 5 min, then add 1 kg of grated carrot . Put the heat to medium high and keep cooking and stir after evry 5 min , this does take time but somethings taste best with patience. Once the milk is almost absorbed add 200 gms of khoya/mava stir well and add 1 tsp elaichi powder , 1 cup sugar . Cook well till thick n almost dry. ( also add fresh malai if u have to enhance richness)
In a pan heat 6 tbsp desi ghee, and roast a fistful of roughly chopped kaju , badam , pista and or ur choice of nuts ( just cut 1 pc into 2 or 3 pc max , dont chop very finely) stirfry well on low heat till slightly golden , switch off heat , mix half tsp elaichi powder and pour the ghee on the halwa , mix and cook well for 5 more min. Serve hot .
If u love experimenting with desserts in a bowl put 2 tbsp of gajar halwa followed by a scoop of vanilla icecream , followed by 2 mini gulab jamuns , šŸ˜‹šŸ˜‹ im literally droooooling . Enjoy guys , plz dont blame me for weight gain šŸ™ˆšŸ¤£
