French Fries
Have received many requests in how to make french fries that stay crispy .
The ready fries we take from out go through a lot of processes and chemical washes . That’s why we need a little patience and hard work to get the perfect fries at home .
To make good fries it is better you take potatoes that are specially used for fries . These potatoes have a lot of sand on them . If you don’t find the Sandy potatoes just take reqular potatoes that are large in size.
Now a days all of us have fancy cutting instruments and processors . But I prefer cutting fries by hand . I feel it makes them crispier due to slightly uneven shape.
So let’s start the process of making our fries.
Firstly peel and cut 1 kg of potatoes to fingers. Wash the cut fries 3-4 times (we are trying to remove all the starch that makes the potatoes soft after frying)
Heat a vessel with enough water to dip the fries completely . Bring it to a boil and add 1 tbsp salt . Add the washed fries and let cook for a minute .
Strain and wash slowly under the tap .
Now sprinkle 5 tbsp corn flour and toss. (Sprinkle 1 tbsp at a time and toss)
Keep the fries in the freezer for 1 hr.
Half fry the French fries till the colour changes slightly and remove in a plate ( take sufficient oil and fry 1-2 fists at a time . If u add a lot at the same time it will just stick together)
Let the half fried potatoes cool for some time .
Refry the potatoes in hot oil a fist at a time and keep stirring . Fry till golden and crisp. You will be able to feel the crispness when you remove in the plate inshallah .
Sprinkle some salt on top and serve hot . You can also toss in some peri peri masala . You can follow my recipe for the peri peri masala.
