Firni

Choose a lazy person to do a difficult job , as she will always find an easy way to do it. This saying does full justice to this recipe . Why grind rice and cook for an hour when your firni can get ready in 15 mins.
So i have 2 versions of this one the basic one , that we get outside also , Nd one shahi rawa firni.

For the basic version….. in a pressure cooker add 1 glass of water 1 glass of milk , 1 cup of soaked basmati rice. 1 tbsp ghee. Cook on high heat till first whistle and low heat for 10 mins . Once cool , open lid add half tsp elaichi powder , 2 glasses milk and lightly blend with hand blender till u see small grains , dont blend too much or too little . Add 1 cup sugar and cook for 5-7 mins . Transfer into a tray or glass bowl or clay bowls and sprinkle some nuts on top . Chill for 2 hrs n serve.
For shahi rawa firni … soak 1 cup rava with1 cup water .
In a vessel heat 1 litre milk and bring to a boil , add the soaked rawa and cook for 10 mins , until thick , add pinch of saffron , half tsp elaichi powder , and half cup mawa ,1 cup sugar . Cook more until nice n thick and serve in a tray or bowl . Garnish with sliced nuts.
