Dum Ke Roat – Hyderabadi Bakery Style

These turn out exactlyyyyyyy like we get in Hyderabadi bakeries. So do not miss out on making these if ur a roat fan like me .

Firstly take half cup of warm milk and mix in a pinch of saffron and yellow color and keep aside

In a big bowl mix together 1 cup rava , 3/4th cup Maida , half cup desiccated coconut, 3/4th cup castor or powdered sugar, 1/4th cup milk powder , 1/4th cup custard powder ( this gives a vvv good flavour and texture) , 1 tsp elaichi powder , 4 tbsp heaped of nut powder ( roughly grind almond , pista and kaju to a rough powder ) , 6 tbsp desi ghee , 1/4th tsp baking soda , and 1/4th tsp baking powder( you can also put raisins but I don’t like so I have not put ) . Mix all of this together and then mix in the milk and saffron mix . It will turn into a v soft dough . Cover and keep aside for an hour . Make balls ( 20 aprox) And put some sliced nuts on top . Place just 4 balls at a time on A greased tray far apart ,and bake in a preheated oven for 20 mins or till golden at 180degrees .
Remove the tray from the oven and let rest for 2-3 mins and then remove and keep on a rack and let it cool down completely. Then you can store in an airtight jar for 15 days .
