Dubai’s Viral Paratha Smash Burger
Firstly for the paratha ( this takes just resting time , otherwise trust me it’s easy and super delicious )
Mix together salt , 1 tbsp sugar ,1 egg . Then mix in 3/4th cup milk and 3/4th cup water . Mix well
Knead 500 gm maida with this , add little water if needed to make a medium soft dough . Once combined . Transfer to a clean table and sprinkle some maida . Knead for a good 10-15 min . Apply 3-4 tbsp oil all over and cover with a damp cloth and rest for 2 hours . After 2 hours make 7 balls and apply 5-6 tbsp oil . Roll the balls in oil and cover and keep for another 1.5-2 hours .
Then apply oil on your clean table and spread a ball of dough into a super thin and big roti . Apply. 3-4 tbsp oil on it and fold from both sides . Then pull the dough and roll using very light hands . Keep stretching the dough in between . You will end up with a cylindrical shape . Press from both sides to flatten slightly.
Prepare all the balls like this and roll into the remaining oil in the bowl . Cover and keep for another hour . Then on oiled table press with light hands to flatten into a thick paratha . Grill with oil in tava on low heat . Keep turning and cook till golden and crisp .
Press 1-3 parathas from the sides to loosen all the fluffy layers inside . Your parathas are ready
For burger sauce . Mix half cup mayo , 2 tbsp ketchup, 2 tbsp mustard sauce and half tsp red chilli powder. Mix and keep aside
For caramelised onions – in a pan take 2 tbsp oil and sauté 2 sliced onions . Add salt and cook cooking on medium heat until light brown . Then add 2 tbsp water and cook more . Add water like this 2-3 times till you get a nice dark brown caramelised onions . ( i personally don’t like caramelised onions in burgers but have taught u guys as you all want exact recipe . If you like it then only make as caramelised onions in burgers do not suit many Indian taste palettes )
For smash burger take 1 kg mutton or beef ( in 1 kg u will be able to make 7-8 Pattie . I have shown double Pattie for the video but have made the rest of burgers with single Pattie . So if u wish to make all double Pattie burgers then take double the quantity of this )
Ps . I have used washed keema for my recipe as I don’t personally prefer using unwashed . To make the authentic recipe you will take fresh keema without washing ( you cant use frozen and defrosted ) and make balls and smash grill on tava . Sprinkle salt and pepper on each side and then put cheese .
If you’re someone like me then wash the keema well and squeeze out all the excess water very well . Mix in salt and 1 tsp black pepper powder and 2 tbsp corn flour mix well . ( do this just before making . You can’t marmite n keep)
Make balls and put little oil on pan or tava and flatten the balls of mince with a smasher as thin as you can . Cook on low what for 40-50 seconds on each side . Put cheese slice and cook for another 10-15 seconds .
While your Pattie is cooking slice the paratha from between and apply the burger sauce on bottom side. Regular mayo on top side . Put caramelised onions on top side .
Put the double or single Pattie with cheese on the bottom side . Close the paratha from top . Wrap in butter paper if you want and serve hot .
