Dubai Style Shawarma Platter

A must try for shawarma lovers.
For shawarma sauce in a blender blend a handful of garlic cloves , salt , juice of 1 big lime , and 1/4th cup milk . Blend well . Now little by little add 1 cup oil and keep blending in between till thick . Now add 2 tbsp tahini paste and blend till combined . Keep aside

For pickle cut cucumber , carrot and beet into fingers , and take whole green chillis .
Now in a vessel take 1 cup water , 1 cup vinegar and salt . Bring to boil and cook each veg one by one for a minute and remove and let cool and use as needed ( this is an accompaniment , if you want you can make or skip )

Marinate 500 gm Chicken cut into thin slabs with salt , juice of 1 lime , 1 tsp garlic paste , 1 tsp red chilli powder, 1/4th tsp haldi powder, 1 tsp garam masala powder, 1 tsp Dhanya powder, half tsp zeera powder, 3 tbsp dahi and 3 tbsp olive oil . Mix well and do coal dhungaar . Let marinate for atleast 2 hours .
Grill in a pan with little oil till done and then cut into strips and keep aside .

Take a rumali roti and fold little from two sides and little from down . As shown in the video . Apply some shawarma sauce in the centre and then sprinkle some sliced iceberg or regular lettuce. Sprinkle chicken and roll the shawarma .

Now in a pan put 1-2 tbsp oil and grill 2-3 shawarma at a time till golden and crisp ( put any weight on the shawarma while grilling on low heat for perfect crispness )

Cut into strips and serve hot with fries , pickle and some extra shawarma sauce and olives if you like. Enjoy.
