Desi Hara Korma
This is my mothers recipe to be honest but I can never get that taste even tho I follow the exact same recipe ( Maa k hath k khane ki baat he alag hai ), I’m sure you guys r going to love this and repeatedly make this as this is a v basic desi and delicious recipe . It goes along well with sponge naan and rice. And sath me agar dahi kachumber ho toh fir maza he alag hai .
Key to cooking this recipe perfectly is sautéing really well at each step .
This can be made with chicken or mutton
In a pressure cooker ( or vessel if making chicken) heat oil ( this is a desi gravy so we need little extra oil to get that tari on top ) and add whole garam masala, 3 finely chopped onions and fry till golden , keep stirring so that the onions get equally browned . Add 3 finely chopped tomatoes, salt , 2 tbsp ginger paste, 2 tbsp garlic paste , half tsp haldi, 2 tsp Dhanya powder, half tsp zeera powder , 1 tsp garam masala powder and sauté well .
Blend together 2 handful of coriander leaves , half cup dahi and 4-5 green chilli to a fine paste .
Add this paste to the gravy and cook really well. Add little water and cover and cook for 5 min ( keep stirring in between) then repeat this process again if adding little water and cooking . ( basically we need to sauté the masalas and all ingredients so well to get a delicious homogeneous gravy )
Then add 750 gms of meat and cook till done . Add water to adjust consistency and add potato cubes and cook till done. Serve hot.
