Delhi Darbar Style Raan / Mutton / Chicken Sikandari

Raan sikandari Delhi darbar style (can be made into mutton sikandari or chicken sikandari)
Make slits onto raan aprox 2 kg( or simply use mutton or chicken pcs) and marinate with 4 tbsp mustard oil, salt, 3 tbsp garlic paste , 1 tbsp ginger paste, juice of 3 limes , 3 tsp red chilli powder , pinch of red colour. Let this marinate in the fridge for few hrs. ( if making raan or mutton pressure cook it at this stage ,if using chicken then grill in the oven till done)
In a blender grind 6 fried onion barista, 250 gm yogurt ,2 fists kaju , 1 fist peeled almond , 1 fist 4magaj, 2 tsp dhanya pwdr, 1 tsp zeera pwdr, 1 tsp haldi , 1tsp garam masala pwdr, 1 tsp elaichi pwdr, 1 tsp white pepper pwdr,1 tbsp kasoori methi, 1 tsp saunf pwdr, little saffron and salt to taste. Blend to fine paste.
In a vessel heat oil and add the above paste and cook for 2 mins , add the cooked meat and saute, add a cup of cream and cook till oil comes up then add chopped coriander 2 drops of kewra essence and 1 tbsp rose water . Serve hot in a thaal and decorate with fried onion , sliced almonds , boiled eggs , and chopped coriander. Serve with butter garlic naan.
