Dajaj Harra / Spicy Chicken Fry
Harra isnt green here….it means spicy .Dajaj harra translates to spicy chicken in Arabic. Had eaten something simmilar at a small eatery and have recreated the recipe by giving my own twist . This can be served as a starter or you can make a roll from it . Check my next post to know how to make the roll .
For the chicken… marinate 500 gms of very thin fingers of chicken with 1 egg, salt , 1 tsp white pepper powder, 1 tbsp garlic paste , half tbsp ginger paste ,1 tsp green chilli paste, 2 tsp red chilli powder , 1 tsp garam masala powder , 2 tbsp red chilli sauce , 1 tbsp shezwan sauce , juice of 1 lime , a pinch of red colour . Let marinate till half hour then mix in 2 tbsp corn flour , 2 tbsp rice flour , 2 tbsp chana aata , and 2 tbsp maida and some chopped coriander . If the batter is very dry add slight water to coat the chicken well . Fry little at a time till crisp and toss some chaat masala. Serve hot with some garlic mayo or ketchup.
