Dahi Wada

This is a must have in Ramadan n one of my fave .
Soak 1 cup of urad dal over night and grind to a thick paste ( you can make extra paste and store in containers in freezer for next time use . Just remove it defrost and then add other ing)
To the urad dal paste add salt , half tsp grated ginger , 1 chopped green chilli , a fist of chopped kaju , 2 pinches of baking soda . Mix well and keep aside.

In a big bowl put 4-5 cups of water , 4 tbsp dahi , 3 tbsp sugar , salt and mix well or blend with hand blender.
Deep fry small balls of the wada batter till dark golden and crisp ( the colour will get light after soaking)

Directly from the hot oil put the fried wadas to the water mix. Let soak for some time and squeeze out excess water . Place the wadas in a tray .

Beat 400 gm of dahi with 6 tbsp sugar , half tsp salt . Just beat with a whisk or spoon . We don’t want this to become thin
Pour the beaten dahi on the wada and sprinkle chat masala , red chilli powder and zeera powder … if u wish u can also add green and sweet chutney. Chill and serve.
