Dabba Gosht
Grind together 2 tbsp 4magaz , 3 tbsp kaju, 2 tbsp chana daliya, 2 tbsp seeng(without skin),2 tbsp white til 1 dry red chilli , 2 tej patta, 1 star anise , 1 tbsp whole dhanya , 1 tbsp saunf , 1 tsp whole zeera and a pinch of haldi. Grind to powder and keep aside .( this is dabba gosh or kadi masala .. you can multiply the quantities and make the masala to store in airtight container in the fridge )
Boil 500 gm small cubes of boneless mutton with salt 1 tbsp ginger 1 tbsp garlic 1tsp green chilli paste and juice of 2 limes and keep aside.
Cut 2 boiled eggs to cubes and keep aside
Cut small cubes of potato , fry till golden and keep aside.
In a vessel put oil and 1 onion chopped , cook till pink then add 1 chopped tomato , then add the dabba gosh masala and saute. Add enough water to make thick gravy and cook well , add the boiled mutton and cook more 5 min. Switch off heat and stir in the boiled eggs and fried potatoes . You can also add a fist of boiled noodles . Add chopped coriander and mix.
In a tray put little ghee and add beaten eggs and cook on stove .. spread the tray with the egg . You should have a thin layer . Then add the dabba gosh gravy and add beaten egg on top ( you can also top it with sliced tomatoes if u like). Bake in oven till egg is cooked and golden. Serve with naan… (this recipe is a little hard to do but really worth all the hard work)
