Chote Kabab (Hindustan Hotel Style)
Firstly grind 4 pav or 8 slices of bread in a grinder to crumbs .
Soak half cup of chana dal for an hour and then roughly grind it without any water . ( this is optional , you can also make it without the dal . Just follow the same recipe and skip the dal )
In a bowl mix together the bread crumbs, 250 gm chicken or mutton keema ( you have to blend the keema in grinder to get a fine texture ) , add the ground chana dal , 1 tbsp garlic paste, half tbsp ginger paste, , 2 onions finely chopped ,2 tbsp koota hua dhanya, salt ,3 tsp red chilli powder,1 tsp red chilli flakes, half tsp haldi ,1 tsp garam masala powder, 1 tsp black pepper powder,2 tsp chaat masala powder. 1 egg and mix well by kneading everything together. Let marinate and then make Small balls and fry till golden and crisp and serve lime and with pav or lambe pav
(Add 2 tbsp ghee in the oil you are frying)
To be honest I had the kabab specially to recreate it for you all and tried making the exact thing. But as my personal point of view I would like some more spice in this . And if I was to give it my touch , I would add in lots of chopped coriander and mint , 7-8 chopped green chilli and 2 tbsp more koota hua dhanya and juice of 1 lime.
