Chocolate Chunk Lava Cookies
Made with whole wheat flour.
In a bowl mix together 250 gms butter with 1 cup castor sugar , half cup brown sugar , 2 tsp vanilla essence , 2 eggs , 1 tsp baking soda , half tsp salt beat well for 2-3 min. Now fold in half cup cocoa powder , 2 cups whole wheat flour and 2 cups of chocolate chunks or chocolate chips. Mix well and keep in fridge for few hrs .
Now prepare chocolate ganache and keep in the fridge till set.
In a bowl cut 400 gms of dark chocolate and keep aside.
In a vessel heat 400 gms or 2 small box of amul cream. Just heat till the cream starts boiling from the sides . Pour the cream on the chopped chocolate and let rest for 2 mins. Then mix well till all the chocolate and cream is well combined.
Your ganache is ready . You can store in glass jar at room temperature for 2 days or a week in the fridge.
To make the cookies flatten a ball of cookie dough and fill a spoon of set ganache .(tip.. after evry batch keep the dough and ganache back in the fridge so it will be easy to handle) Make cookies and bake for 5-7 min at 250°. You might find the cookies are soft at this stage but let them cool they will set outside . These cookies are actually supposed to be soft for the lava to ooze out. If u bake for a longer time you will get crispier cookies but the lava will set inside and not ooze out.
You can store the cookies in a jar for 4 days.
