Choco-Lava Cake

This is mine and my families mosttttt fave chocolate dessert that’s made quite often at my end. I use fresh orange juice in this recipe that really enhances the taste . You can skip if u wish.
This recipe yields 15 lava cakes made in small ramkins (glass bowls used for baking.. you can also use aluminium moulds or also use the small cooking vessels we have at home)

In a big bowl beat 8 eggs with half tsp salt for 3-4 min or till very fluffy. Keep aside
In a separate bowl beat 225 gm castor sugar with 225 gm butter till fluffy.
Melt 500 gm chopped dark chocolate in micro or double boiler keep aside .
Beat the egg and butter mix together.
Fold in 3 tbsp sifted cocoa powder and 75 gm sifted maida.
Finally fold in the melted chocolate and 2 tsp vanilla essence , and rind and juice from 1 orange or malta or mosambi or lime. ( rind is to grate the peel of the fruit just till you touch the white part . Cut the fruit into 2 and squeeze out juice with your hands)
Mix well and bake in greased ramkins for 15 min aprox.
What you need to make sure in this is that the cake should be baked well from sides and should be slightly jiggly in the centre .
Let the cake cool for 2 min and slightly loosen from sides with a knife and remove in a plate.
I prefer serving in the ramkins itself . As it is or sometimes along with some vanilla icecream and chopped roasted cashews😋😋
