Chicken Shawaya

Chicken Shawaya is commonly available in gulf countries and in south India . It is authentically roasted in a horizontal rotisserie oven where the chicken keeps turning and cooking all around.
The direct flame in the oven gives a beautiful color and texture to the chicken which is difficult to get in a normal oven but the taste of this recipe is just tooo good .

Firstly blend together 1/4th small onion , half small tomato , half inch ginger sliced , 6-8 cloves of garlic ( mine were too small so I’ve taken more ) , 2 green chilli ,1.5 tbsp dahi , half tsp haldi , half tsp Dhanya powder , half tsp zeera powder ,1 tsp red chilli powder, half tsp garam masala powder , half tsp black pepper powder , salt , juice of 1 lime and 4 tbsp olive oil ( missed shooting the olive oil step) blend everything together and apply on poked whole chicken with skin ( around 750gm to 1 kg) let it marinate overnight and grill on oven for around 45 mins at 220 degrees till done and golden .

For garlic sauce . Blend 6-7 cloves of garlic along with 1 tsp sugar , salt and 1 tbsp vinegar. Blend and then add 1/4th cup milk and blend more . Add half cup oil little at a time and keep grinding till thick.
